shigeru fujita

Born in Hakodate Hokkaido, Japan, Shigeru Fujita started cooking at the very young age of nine as a result of his parents busy work schedule. After his high school graduation, Shigeru traveled abroad to learn English and study Fashion Design in Canada, where he discovered his passion for food whilst operating in a restaurant. After exploring and expanding his knowledge of food in Canada and abroad, he decided to return to his roots and delve deeper into the Japanese kitchen, ultimately leading Shigeru’s move to Sapporo, Japan. There he spent 6 years of hard training and worked tirelessly performing tasks such as washing dishes, scaling fish and serving guests at a traditional Sushi restaurant. Eager to test his skills in other corners of the globe, Shigeru decided to move to Frankfurt am Main in 2005, which would become the beginning of an extensive tour in five different cities in the span of 17 years. Exploring in multifarious kitchens from Take-Away sushi, working as the Head Chef at Nobu and  Executive Head Sushi Chef in Munich, Shigeru has made a name for himself not only in Germany but throughout Europe with his unique skills, recipes, passion and one of a kind artistry in Japanese Cuisine. Now Shigeru Fujita welcomes you to experience and taste his creative Japanese flavors, tastes and aromas as he premiers his very own concept at USHI in Bogenhausen, Munich.
